TVP Tacos


Who doesn't love taco night? I mean it has its own day of the week and everything! In this recipe, I'm using TVP as the base, which is an awesome meat replacement. Not only is it better for the environmental, but it's cheaper. It is also healthier as meat has been linked to increased risk of cancer, heart disease, and diabetes. If you're not familiar with TVP it stands for texturized vegetable protein and is also known as textured soy protein. But what is it exactly? TVP is made from soybeans and is a soy protein that has no fat or cholesterol.

What you'll need:

  • 1 cup of TVP - I bought a 5lb bag off Amazon 
  • 2 cups of vegetable stock 
  • 1 TSP of Salt
  • 1 TSP of Pepper
  • 1 TSP of Garlic Powder 
  • 1 TSP of Chili Powder
  • 1 TSP of Cumin 
  • 1 TSP of Paprika 
  • 1/2 cup of Salsa 
  • Tacos of your choice - I like to mix it up with both hard and soft 
  • And whatever you like for toppings - if you like sour cream and are looking for a vegan option Tofutti is the best!

Instructions:

In a pot pour in 1 cup of TVP and 2 cups of vegetable stock and cook on medium heat. Once the liquid has absorbed into the TVP add the salt, pepper, garlic powder, cumin, paprika, and salsa. Cook for about 5 to 7 minutes until all the ingredients are combined. Now for the best part decorating your taco with your favorite fixings! I personally love to load mine up with Tofutti's vegan sour cream, avocado, and Trader Joe's Salsa Autentica. What are your must-have toppings? Let me know if the comment section.
