BBQ Seitan "Steak Tips" Recipe

Ingredients

Dry:
2 cups vital wheat gluten
1/3 cup nutritional yeast
1 tsp salt
1 tsp Montreal chicken seasoning (don't worry it's vegan)
1 tsp garlic powder
1 tsp paprika

Wet:
2 cups vegetable stock
2 tbsp sweet soy sauce

Other:
1 cup flour
2 cups BBQ sauce
2 cups vegetable stock

Directions

Step 1: Combine all dry ingredients in a large bowl. Then stir in wet ingredients and mix until combined.

Step 2: Kneed "dough" into a ball for approximately 30-60 seconds. Make sure you don't over knead the dough or else your tips will not be tender.

Step 3. Place the dough in a pot and cover with vegetable stock. Cook on medium high heat for 1 hour. Set aside and let cool.

Step 4: Once your dough is cool enough to handle, cut into evenly sized steak tip pieces.

Step 5. Coat with flour and place in a 400-degree oven for 45-60 minutes. Your tips should be crispy on the outside but fork tender.

Step 6: Coat with your favorite BBQ sauce (we prefer Kansas City BBQ from whole foods, Carolina sauce from Trader Joes, or the classic James River BBQ sauce) and enjoy!!
